Vegetarian Paella
INGREDIENTS:
1 lg Leek; quartered, sliced thin 8 Sprigs fresh mint; minced
1/2 lg Green pepper; chopped 3 tb Parsley; fresh minced
2 Carrots; chopped 1/2 ts Turmeric
2 Celery; chopped 3 tb Tomato sauce
2 Green onion; chopped 1 c Rice
1 lg White onion; chopped 1 c (to 2 c) Water or Chicken
8 Sprigs fresh thyme; leaves -stock
-only 1 cn Peas

1 lg White onion; chopped 1 c (to 2 c) Water or Chicken
8 Sprigs fresh thyme; leaves -stock
-only 1 cn Peas
In a large pot or wok, saute leek, green pepper, carrots, celery, green onion and white onion... about 2-3 minutes. Add fresh thyme, mint and parsley. Add turmeric and tomato sauce. Add 1 cup rice and saute another minute or two. Add 1 to 1 1/2 c water or chicken stock, cover and simmer 15 minutes. Add peas, cover and simmer another 5 minutes or until all moisture is absorbed by rice. Mmmmmm, delicious, simple and quick.
