Sole Stuffed With Spinach^
INGREDIENTS:
6 Green lasagna noodles 6 (3oz) slamon fillets
2 tb Lowfat buttermilk or skim 1 c Marinara sauce (seperate
-milk -recipe)

2 tb Lowfat buttermilk or skim 1 c Marinara sauce (seperate

Preheat oven to 350F. Cook noodles until tender but firm. Drain. Mix milk with Marinara sauce and pour 1/4 cup on bottom of a baking dish. Place 1 fillet in center of 1 cooked noodle and roll up. Place roll in sauce, seam side down. Repeat with remaining fillets and noodles. cover rolls with remaining sauce. Bake 20-25 minutes, until bubbly and fish is cooked. Makes 6 servings.
Variation: Add 1 tablespoon chopped spinach to center of lasagna with salmon.
