Raisin Penny Pinchers
INGREDIENTS:
1/2 c Butter (or marg.); softened 1/8 ts Salt
1/4 c Sugar 1 ts Vanilla extract
1 Egg; beaten 1 Egg white; slightly beaten
1 1/4 c Flour, all-purpose Coconut, shredded
1/2 ts Baking powder

Cream butter; add sugar gradually, continuing to cream. Add eggs; blend well. Combine flour, baking powder, and salt; add to creamed mixture, beating well. Stir in vanilla.
Roll out dough about 1/8" thick on a lightly floured board; cut with doughnut cutter. Brush tops with egg white; sprinkle with coconut. Bake at 400 degrees for 8 minutes or until a delicate brown.
