Phipps Famous Shortbread
INGREDIENTS:
6 c Sweet apples, peel and slice 1 c Apple cider
1 tb Ground cinnamon (optional)

1 tb Ground cinnamon (optional)
Place apples and cider in heavy saucepan over medium heat. Cook, stirring frequently, until mixture comes to a boil. Lower heat and simmer, stirring frequently, for about 1 hour, or until apple slices have disintegrated and butter is thick. Remove from heat. Stir in cinnamon. Vacuum seal. Makes 4 1/2 pint jars.
