Old-Fashioned Microwave Chocolate Pudding


INGREDIENTS:

3 pk (12 oz) semisweet chocolate (+ 1 tbs)
3 oz Unsweetened chocolate square 40 lg Marshmallows
-- cut-up 2 c Toasted almonds; whole
1/2 c Vegetable shortening, solid

ISBN 0-06-016537-5 Preparation Time: 0:21 1. In a 1-qt glass bowl, combine 1 pkg (12 oz) chocolate chips, 1 square unsweetened chocolate, and 3 Tbs shortening. Heat in microwave on High 2 mins, or until melted and smooth when stirred. Turn into a deep 2-qt casserole or souffle dish, spreading evenly. Sprinkle half of marshmallows and half of almonds evenly over chocolate.

2. Repeat process, melting another pkg chocolate chips, square unsweetened choclate and 3 Tbs shortening and layering with remaining marshmallows and almonds. Then top with a final layer of chocolate mixture (of remaining chocolate and shortening). Refrigerate until firm, about 2 hours. Cut or break into large pieces. Store in airtight container.
