Mike's Prize Winning Salsa**
INGREDIENTS:
1/2 c Butter or margarine 1 c Ham; fully cooked; cubed
- divided 1/4 c Onions; green; sliced
2 tb Flour; all purpose 12 Eggs; beaten
1/2 ts Salt 1 cn Mushrooms; sliced; drained
1/8 ts Pepper - 4 oz. can
2 c Milk 1 1/2 c Bread crumbs; soft
1 c Cheese; American process; Additional sliced green
- shredded Onions, optional

"There's nothing nicer than a delicious egg dish you can prepare the night before so you're not 'scrambling' when guests arrive"
In a medium saucepan, melt 2 tablespoons butter. Add flour, salt and pepper; cook and stir until mixture begins to bubble. Gradually stir in milk; cook unti thickened and bubbly, stirring constantly. Remove from the heat. Add cheese; mix well and set aside. In a large skillet, saute ham and onions in 3 tablespoons butter until onions are tender. Add eggs, cook and stir until they begin to set. Add the mushrooms and cheese sauce; mix well. Pour into a greased 11 x 7 x 2 inch baking pan. Melt remaining butter; toss with bread crumbs. Sprinkle over top of casserole. Cover and refrigerate for 2 to 3 hours or overnight. Bake, uncovered, at 350F for 25 to 30 minutes or until top is golden brown. Sprinkle with additional onions, if desired.
