Mexican Style Scallops^


INGREDIENTS:

1 ts Dijon mustard, ds Pepper
-no salt added 4 (4oz) boned fish fillets
1/4 c Fresh lime juice OR
2 ts Freshly grated gingerroot 4 (5 1/2-6oz) fish steaks with
1/8 ts Cayenne pepper -bone
1 ts Apple juice concentrate
Combine all ingredients except fish in a shallow bowl. Add fish to lime mixture; marinate at least 1 hour, turning occasionally. Preheat broiler. Place fish on broiler rack. Broil 5 minutes, basting with marinade. Turn carefully; broil 5-7 minutes longer until fish is opague. Makes 4 servings.
