Mexican Salad
INGREDIENTS:
Onions
1 lb Ground beef
Cumin
Salt & pepper to taste
Rosemary
Thyme
Green chiles; roasted,
-chopped & diced
1 Chopped tomato; fresh or can
1/2 c American or Monterey Jack
-cheese
Mexican rolls; toast or
-hominy

Mexican rolls; toast or
-hominy
Start with onions....as many as you like. Chop & saute onions in butter or bacon fat. Add ground beef & spices to taste. Cook until meat is done. Add chiles, tomatoes & cheese & cook until cheese melts & mixture thickens. Serve on toast, rolls or hominy. The hominy may be added along with the chiles & tomatoes.
