Mediterranean Pasta with Eggplant and Peppers
INGREDIENTS:
16 oz Pasta -- ziti
1/3 c Oil -- olive
Peppers, red, lg -- strips
4 oz Pepperoni -- sliced
Onion, lg -- chopped
Anchovy fillets -- drained
And
Garlic cloves, lg -- minced
Chopped (optional)
1/4 ts Pepper
1/2 c Olives, ripe, pitted --
Sliced
16 oz Pasta -- ziti
1/3 c Oil -- olive
Peppers, red, lg -- strips
4 oz Pepperoni -- sliced
Onion, lg -- chopped
Anchovy fillets -- drained
And
Garlic cloves, lg -- minced
Chopped (optional)
1/4 ts Pepper
1/2 c Olives, ripe, pitted --
Sliced
Prepare pasta as directed on package; drain. meanwhile, cook and stir red peppers, onion, garlic and pepper in hot oil until tender. Stir in remaining ingredients; heat. Toss with pasta.
