Italian Chicken and Rice


INGREDIENTS:

2 tb Olive oil
1/2 ts Italian seasoning
1/4 ts Garlic salt, paprika
4 Chicken breasts; bone-in
1/2 c Parmesan cheese; grated
2 md Baking potatoes; unpeeled,
-large strips
1. In small bowl, blend oil, Italian seasonings, garlic salt and paprika. 2. Place chicken breast in centre of each of four 18"x12" pieces of foil. Sprinkle each with 1 tbsp of cheese and top with potato strips. Drizzle oil mixture over top and spinkle with remaining cheese. Wrap securely.

3. Place packets seam-side up on cookie sheet. Bake at 400F for 45-55 mins until cooked through. (If grilling, cook seam-side down 4-6" from med-high heat for 40-50 mins, turning once turing cooking)

Open packets carefully, allowing steam to escape.

Var -
use mozzarella in place of parmesan, or yams in place of baking potatoes.
