Honey-Baked Root Vegetables


INGREDIENTS:

3 md Acorn squash (1 lb ea) 16 oz Can whole-berry
1 tb Butter -cranberry sauce
1 1/2 c Granny smith apples
Place squash in a 13x9-inch baking dish. Bake at 400?F for 45 minutes or until tender. Or pierce squash with a fork and arrange on paper towels in microwave oven. Microwave on high 9-10 minutes or until tender.

Melt butter in medium nonstick skillet over medium heat. Add apple; saut? for 5 minutes. Stir in cranberry sauce; cook for 2 minutes or until apple is tender, stirring occasionally.

Cut squash in half lengthwise and discard seeds and membrane. Spoon 1/3 cup of fruit filling into each squash half.
