Holiday Eggnog Cheesecake


INGREDIENTS:

12 Whole eggs, separated
1 c Sugar
1/2 c Grand Marnier, optional
6 c Milk, cold
1 c Heavy cream
2 ds Ground nutmeg, garnish
Just got back from the Disney Institute again and as always, I had a marvelous time. You guys have got to go! I took: Imagineering!, Radio Drama, Outdoor Photography, Celebrations!, Boxing Aerobics, Animation Sampler, Romantic Dinners, Canoe Adventures and Taste of the Word: Bayou.

Celebrations: Holiday Brunch: Celebrations is a class that shows you how to have a dining event that not only tastes good and looks good but is generally enjoyable. Fitting with the holiday season, we worked on a holiday brunch. Aside from these recipes, we learned about table presentation, planning and tricks to make the event memorable. We also created several types of food related decorations.

In a large bowl mix egg yolks and sugar on low speed until blended. Turn mixer to highest speed and let go for 15 minutes, scraping bowl occasionally. Chill for one hour. Once chilled, carefully hand blend in liquor so as not to curdle egg mixture. Return to fridge.

Twenty (20) minutes before you are ready to serve the eggnog, whip egg whites until soft peaks form. In another bowl, whip heavy cream to stiff peaks. Gently whisk both into egg and milk mixture.

Sprinkle with nutmeg and serve.

Liquor is optional; just add 1/2 cup of milk instead.
