Haroseth (Passover Sweets)

INGREDIENTS:

SEPHARDIC COOKING; MARK
1 lb Pitted dates
1/2 lb Walnuts, chopped
1 tb Dark raisins
1/2 c Sweet red wine
1. In a processor, grind the dates and raisins together. Add the chopped walnuts and the wine and mix well. Refrigerate until ready to use at the Seder.

Dates are often the principal fruit used when preparing the Passover Haroseth in North Africa and other oriental countries. This is a classic preparation, using enough wine to moisten the paste well.
