Greek Potato Salad with Dried Tomatoes
INGREDIENTS:
8 Boiled potatoes
1 lg Sweet onion; fine diced
1/3 c Extra virgin olive oil
1 Lemon; juice of
1 ts Salt
1 ds Pepper
1/2 ts Dried mint or oregano

Combine warm potatoes with all the ingredients and blend to mix. Serve warm. May place scoops of this potato salad atop a greek green salad or serve on the side. Extra virgin olive oil improves the flavor of this dish.
