Gazpacho Pasta Salad
INGREDIENTS:
8 oz Rotini; Twists or Spirals,
-uncooked
4 md Ripe tomatoes; peeled,
-seeded and chopped
1/2 c Sliced green onions;
-(scallions)
1/2 c Peeled; seeded and chopped
-cucumber
1 Clove garlic; minced
2 tb Chopped cilantro; or 2 tsp.
-dried cilantro
2 tb Olive oil
1 tb Red or white wine vinegar
1 ts Salt
Cayenne pepper to taste
