Fruit Smoothie

INGREDIENTS:

1 pk (10.25oz) silken soft tofu
1 c Fruit juice (orange, apple,
-cranberry)
1 Banana
1 c Berries such as strawberries
-or blueberries (optional)
Anyway, here's a recipe, out of "The Lactose-Free Family Cookbook" by Jan Main (reprinted without permission). I'm sipping on one now, so I can attest that it really does taste great. :)

1. In blender or food precessor, puree tofu, fruit juice, banana and berries (if using) until smooth. Pour into glasses and serve immediately.

And my own editorial comments: I made it with fresh raspberries and cran-raspberry juice. Very good. Although I would recommend refrigerating the ingredients beforehand if you want it to be a nice cold drink/desert/meal.
