Fruit Pizza #1
INGREDIENTS:
1 pk (18-oz) refrigerated sugar
-slice 'n bake cookies OR
-your own sugar cookie
-recipe
1 pk (8-oz) cream cheese
1/3 c Sugar
1/2 ts Vanilla
Assorted fruits (ex:
-pineapple chunks, mandarin
-oranges, bananas, fresh
-strawberries & canned
-blueberries)

Here's a recipe that was submitted to my sons' elementary school cookbook (a number of years ago): Tasty Treasures from Traditional School by Carol Ann Grimmer
Cut cookie dough into slices 1/8" thick. Line ungreased 14" pizza pan with slices, overlapping slightly. (OR spread your sugar cookie dough to make a crust.) Bake at 375~ for 12 minutes. Cool.
Combine cream cheese, sugar & vanilla, mixing until well blended. Spread mix over crust. Arrange fruit over cream cheese layer.
Cook juice from canned fruits with 1 Tablespoon cornstarch until thick. Pour over fruit; chill. Cut into wedges.
