Fruit Cocktail Cake (Or Sometimes Known As Suprise Pudding)
INGREDIENTS:
1 c Sugar
1 Egg
1 c Flour
1 ts Salt
1/4 ts Salt
1 ts Vanilla
1/2 c Brown sugar
1/2 c Walnuts
2 c Fruit cocktail (no. 2 can)

This made the rounds 20-25 years ago: Beat eggs and sugar together. Sift flour, soda, salt. Add egg mixture and vanilla. Fold in fruit cocktail. Pour into 9 X 9 pan. Sprinkle top with brown sugar and nuts. Bake 45 min. at 325 degrees. Serve with whipping cream.
