2 tb Olive Oil
2 sm Carrots; Shredded
2 sm Stalks Celery; Diced
1/2 c Onion; Diced
Salt & Pepper to taste
Your choice if pasta or
-spaghetti squash
Saute vegetables in olive oil. Add can of tomatoes, salt and pepper. Cook till carrots are as tender as you like them. Serve on pasta or spaghetti squash. Makes 4 servings. L.King
