Fresh Fig Cookies


INGREDIENTS:

1 1/2 c Chopped fresh figs, (3/4
-pounds)
Vegetable cooking spray
1 c Firmly packed brown sugar
6 tb All-purpose flour
1/4 ts Salt
1 1/2 c Plain low-fat yogurt
3/4 c 1% low-fat milk
1 1/2 tb Brandy
5 Egg whites
1 ts Powdered sugar
Place figs in a 2-quart baking dish coated with cooking spray; set aside.

Combine brown sugar and the next 6 ingredients in container of an electric blender; cover and process until smooth.

Pour mixture over figs.

Bake at 375 degrees for 40 minutes. Cover with aluminum foil; bake an additional 15 minutes or until knife inserted in center comes out clean. Cool 5 minutes; sprinkle with powdered sugar. Yield: 10 servings (serving size: 1/2 cup).
