Fish Piccata
INGREDIENTS:
1 cn Salmon. I took bones and
-skin out, added:
1/2 c (maybe more) seasoned bread
-crumbs
1 Egg
1 Handful fine chopped celery
1 Handful fine chopped and
-onion
1/2 ts Salt
1/4 ts Pepper
1 tb Lemon juice
1/4 ts Garlic powder
1 ts Chef Prudhomme vegetable
-seasoning (or any
-cajun-type stuff)
Snipped fresh thyme and
-scallions from my garden

Made the patties and sauteed in very little olive oil (just enough so they don't burn) in a cast iron frying pan until brown on both sides. Served with sauteed onions, pineapple and green peppers and homemade tartar sauce. This made 7 patties.
