Fig Bars


INGREDIENTS:

1 1/4 c Unsifted flour
1/2 ts Baking soda
1/2 ts Salt
1 1/2 c Quick cooking oats (not
-instant)
3/4 c Brown sugar; packed
3/4 c Melted margarine
16 oz Fig filling (I pureed the
-figs to make 2 cups
-filling)
I've been getting quite a few figs from my tree, so after making some preserves, I tried this recipe by Ethel Quarnstrom and Annette Czillinger in "That Hungarian's In My Kitchen". Delicious!

Combine flour, soda, salt, oats and brown sugar. Add margarine and stir well. Reserve 1 cupful. Put remainder in bottom of 13x9x2-inch greased pan. Spread with the fig filling. Sprinkle with the reserved mixture. Bake at 375 degrees for 25 minutes. Cool, cut into bars or squares. Other fillings, such as date or apricot can be used. Good year round. Makes 12 to 16 pieces.
