Elanor's Sweet Potato Pie
INGREDIENTS:
8 oz Fresh mushrooms; sliced
1 c Chopped onion
2 tb Vegetable oil
3 tb All-purpose flour
1 c Chicken broth
1/2 c Low-fat milk
1/2 ts Paprika
1/2 ts Salt
1/4 ts Pepper
1 cn (6-1/2 ounces) starkist?
-tuna; drained and broken
-into chunks
1/4 c Grated parmesan or romano
-cheese
2 tb Minced parsley
1 8 ounce thin spaghetti or
-linguine; broken into
-halves, hot, cooked

In a large skillet saut? mushrooms and onion in oil for 3 minutes, or until limp. Sprinkle flour over vegetables; stir until blended. Add chicken broth and milk all at once; cook and stir until mixture thickens and bubbles. Stir in paprika, salt and pepper; cook for 2 minutes more. Stir in tuna, cheese and parsley; cook for 1 to 2 minutes, or until heated through. Spoon over pasta.
