Egg Salad Monte Cristo Sandwiches
INGREDIENTS:
2 Eggs; hardboiled for 10-12

-refrigerator overnight
-before you peel them)

1 1/2 ts Mayonnaise (or low-fat
-substitute)
1/4 ts Dry mustard
1 Scallion; minced
Salt & pepper to taste

Another variation for people who like marinated foods is to leave out the dry mustard and add chopped dill pickles and a little pickle juice. Leave the salad in your fridge overnight to develop FLAVOR (only works if you don't have a roommate, spouse, or significant other).
