Dark Fruit Cake Pt 1/2
INGREDIENTS:
1 c Shortening
1 c Granulated sugar
4 Eggs
1 c Molasses
1 c Strong coffee or rum
3 1/2 c All purpose flour
1 ts Each of: salt; nutmeg,
-baking soda and cinnamon
1/2 ts Cloves
1 c Strawberry jam
8 oz Cherries; glazed
8 oz Mixed fruit
2 lb Each of: raisins; dates,
-currents
1 c Shortening

Sorry about the responses you received regarding your inquiry, I don't have the recipe in fact never even heard of the bakery but I do have a very good one taken from my Simply Delicious Cooking 2 cookbook, enjoy. Chef K
Cream the shortening and sugar, add beaten eggs, molasses and coffee / rum. Mix well. Add spices to flour and add to mixture. Add strawberry jam and fruit last. Divide into two, five pound pans which have been greased and floured. Bake for 3 hours in a preheated oven at 275 -
300 F (150 -
160 C).
NOTE: If rum is used instead of coffee allow the fruit to soak in it overnight for a better flavour.
