Curly Endive and Bean Soup


INGREDIENTS:

4 md Potatoes
1/4 c Butter or margarine
1 Clove garlic
1/3 c Grated Parmesan cheese
2 Green onions; sliced
Preheat oven to 400 degrees. Peel, core and slice potatoes to create long spirals. Slice "cores" into 1/4-inch rounds. Place in shallow 2-quart baking dish. Melt butter with garlic. Drizzle mixture over potatoes. Sprinkle with Parmesan cheese and onions. Bake for 35-45 minutes or until potatoes are lightly browned and tender.
