Cracker Barrel Biscuits
INGREDIENTS:
1 md Red Bell Pepper; cut in

1 sm Onion; sliced
1 sm Zucchini; sliced
1/2 ts Oregano Leaves
1 tb Fleischman's Margarine
32 Premium Saltine Crackers;
-any kind
4 oz Reduced Fat Cheddar Cheese;
-shredded
2 c Skim Milk
1 c Egg Beaters? 99% Egg
-Substitute

In large skillet, over medium heat, cook and stir red pepper, onion, zucchini and oregano in margarine until tender. In lightly greased 9 x 9 x 2-inch baking pan, layer half each of the crackers, vegetable mixture and cheese. Repeat layers, ending with cheese.
In bowl, beat milk and egg product; evenly pour over cheese layer. Bake at 350? for 30 to 35 minutes or until knife inserted in center comes out clean.
