INGREDIENTS:
1 lb Fish filets
8 oz Lime juice
1 Large onion, finely chopped
1 Small jalapeno pepper, chopt
2 Med tomatoes, finely chopped
30 Pitted green olives
1/8 ts Cumin
20 Capers
1/4 c Fresh coriander, chopped
1/4 c Olive oil
1 Salt & pepper to taste
1 Oregano to taste

Yield: 6
Marinate fish in lime juice for 4 to 5 hours, until fish turns white. Drain; mix with all other ingredients. Serve chilled.
