Carrots


INGREDIENTS:

8 Carrots, peeled (up to 10)
1 c Raisins, or more to taste
1/2 c Orange juice
Splash of balsamic vinegar,
-or more to taste
1 cn Cubed pineapple, with some
-juice
1/2 c Shredded apple (optional)
-(up to 3/4)
Using food processor if handy, grate carrots. Mix with all other ingredients, including food processed apple if desired, and chill. Very refreshing and healthy. I have seen this made with fat-free mayo but not really necessary since the orange juice/vinegar acts as a great dressing.
