Cajun Red Beans and Rice
INGREDIENTS:
3 Shallots
1 tb Minced parsley
2 tb Wine vinegar
5 tb Salad oil
2 c Red beans, cooked, cold
Salt & pepper to taste

Chop shallots fine, including tops. Add parsley, vinegar, and oil and season to taste. Pour over beans and pack in jars.
