2 c Cooked black runner beans
2 c Cooked Wehani rice
1 c Finely diced crunchy celery
1 c Diced mango
1/4 c Finely diced red onion
1/2 c Packed cilantro, chopped
1/3 c Dressing of choice made with
-olive oil, white wine
-vinegar and toasted chili
-powder, up to
Salt and freshly ground
-black pepper
Mix the ingredients together and season with salt and pepper.
