Black Bean and Smoked Chicken Soup
INGREDIENTS:
12 oz Ground turkey sausage
1 cn Reduced-sodium chicken
-broth; (14.5 oz.)
1 cn Black beans; (15 oz.) rinsed
-and drained
1 cn Golden hominy; (14.5 ounce)
-rinsed and drained
1 cn Mexican-style stewed
-tomatoes; (14.5 ounce) NOT
-drained
1 c Frozen loose-pack diced hash
-browns
1/2 c Sweet green peppers; chopped
1/3 c Onion; chopped
1 Clove garlic; minced
1/2 ts Chili powder
1 ts Dried oregano; crushed

In large saucepan, brown sausage. Add green pepper, onion, garlic and cook until tender. Stir in broth, black beans, hominy, tomatoes, potatoes, chili powder and oregano. Bring to boiling; reduce heat. Cover and simmer 30 minutes.
Serves 6.
NOTES : Made 11-6-97. Added 1/2 tsp. more chili powder and 1 green chili, chopped. Used Jimmy Dean pork sausage.
