Beet Soup with Dill and Yogurt
INGREDIENTS:
1 Bunch of beets,
Peeled, halved, sliced
1 Beet greens,
Washed and finely chopped
3 Stalks celery, diced
1 tb Lemon juice
Salt & pepper to taste
1 Lg onion, diced
4 Carrots, sliced
1 tb Vinegar
1 tb Horseradish
1 cn Tomato soup

Put vegetables in a large pot with water to cover. Add remaining ingredients and mix thoroughly. Simmer 2 -
2 1/2 hours, until beets and carrots are tender.
