Beans with Thyme & Cashew Nuts
INGREDIENTS:
1/2 c Olive oil 1 tb Sugar
2 ea Onions, chopped 1 ts Salt
4 ea Garlic cloves 1/2 ts Black pepper
2 lb Runner beans, trimmed & 1 ts Basil
-- sliced 2 c Stock
1 lb Tomatoes, chopped
1/2 c Olive oil 1 tb Sugar

1 lb Tomatoes, chopped
Heat oil in a pot & fry the onion for 2 minutes. add garlic & fry together. Add the rest of the ingredients & the seasonings. Mix together well. Fry for 5 minutes. Add stock. Simer till the beans are tender. Serve hot or cold.
