Barbecued Jerky


INGREDIENTS:

1 lb Pork loin; leg or shoulder,
-boneless; cut in 1/2" cubes
1/4 c Brown sugar
1/4 c Water
1/4 c Soy sauce
1 1/2 tb Dark molasses
1/8 ts Ground coriander
1/8 ts Black pepper
1/4 c Onion; minced
1 Clove (small) garlic; minced
1 tb Ginger root; minced
2 tb Fresh lime juice
Wooden skewers


Combine mixture with onion, garlic, gingerroot, lime juice and Pork. Cover and marinate in refrigerator 2 hours.

Soak wooden skewers in water for 15 minutes. Thread Pork onto skewers. Barbecue or broil with low heat 8 to 10 minutes to medium doneness, basting occasionally with marinade.

Serving Ideas : Serve over rice
