Barbara's Macaroni and Cheese in Crock Pot


INGREDIENTS:

4 c Tomato juice
1 ts Tarragon
1 Cucumber
1 ts Basil
1 Ripe tomato
1 Green pepper
1/4 c Fresh chopped parsley
1 md Yellow onion
1/4 c Minced scallions
2 tb Red wine vinegar
1 Lime , juice of
2 tb Olive oil
1/2 Lemon , juice of
Salt & pepper to taste
In food processor, mince green pepper and onion until they exude liquid. Add to tomato juice. Chop cucumber and tomato. Add to tomato juice mixture. Add all other ingredients. Mix well and chill for several hours. Serve VERY cold. This is a refreshing soup to have on a hot summer day!!!
