Banana Orange Raisin Bread
INGREDIENTS:
4 Egg whites
2 lg Bananas; mashed
1/3 c Corn syrup
1 1/2 c 1% low-fat milk; * see note
2 tb Vegetable oil
1 ts Vanilla
2 tb Orange peel; grated
3 1/2 c Flour
1/3 c Sugar
4 ts Baking powder
1 ts Baking soda
1/2 ts Salt
1 ts Cinnamon
1 c Raisins

1 c Raisins
Preheat oven to 400 degrees. Grease muffin tins. Using a whisk combine all wet ingredients including orange peel. In a separate bowl combine dry ingredients, mixing well. Add dry ingredients to egg mixture stirring just until combined. Fill muffin tins 2/3 full. Bake for about 20 mins. or until done. Cool 5 mins. and then remove from pans. * use 1/2 orange juice
