Banana Gingerbread Bars
INGREDIENTS:
2 c Whole wheat regular or
-pastry flour
1/4 c Toasted wheat germ
1 ts Baking powder
1 ts Baking soda
1 1/2 ts Ground ginger
1 ts Cinnamon
1 1/2 c Mashed banana (about 3
-large)
1/4 c Molasses

1. Combine dry ingredients and mix well till combined. Add remaining ingredients, stir till dry igredients are just moistened.
2. Coat an 8x4 loaf pan with non-stick cooking spray. Spread mixture evenly in the pan, and bake at 325 F for 40-45 minutes, or just until a wooden toothpick inserted in the ceneter of the loaf comes clean.
3. Let sit in pan for ten minutes, then cool completely on a wire rack.
