Baked Sweet Potatoes with Onions and Lime Butter
INGREDIENTS:
1 cn (16-oz) small sweet potatoes
-cut into 1/2" cubes (we

1/4 c Honey
1 1/2 tb Grated fresh ginger (we used
-rehydrated minced--maybe

1/2 ts Ground cardamom
1/4 ts Ground black pepper

Combine all ingredients. Bake in 8x8" baking dish at 400?F for 20 minutes.
The original recipe called for 1 tablespoon olive oil and a non-stick-sprayed baking dish, neither of which we used. No sticking, no problems.
