Baked Squash


INGREDIENTS:

3 lb Yellow summer squash
1/2 c Chopped onion
1/2 c Cracker meal or bread crumbs
2 Eggs
1 Stick butter
1 tb Sugar
1 ts Salt
1/2 ts Black pepper
Wash & cut up squash. Boil until tender. Drain thoroughly & mash. Add all ingredients except 1/2 of butter to squash. Melt remaining butter. Pour squash mixture into baking dish & spread melted butter over top & sprinkle with cracker meal or bread crumbs. Bake at 375 for about 1 hour or until brown on top.
