Baked Apple Pudding


INGREDIENTS:

1/3 c Margarine
2 ts Cinnamon
4 Tart apples; peeled/thinly
-sliced
2 Eggs
1/4 c Oil
1 c Milk
2 c Corn Flakes Crushed To Equal
-1 Cup
1 1/4 c Flour
1/3 c Sugar
2 ts Baking powder
1 ts Salt
Maple syrup
Melt margarine in 10 inch skillet. Stir in cinnamon and apples. Cook, covered for 10 minutes or until apples are tender but not mushy. Set aside.

Measure eggs, oil and milk into mixing bowl. Mix well. Add crushed cereal, flour, sugar, baking powder and salt. Mix only until combined.

Spread batter evenly over apples in skillet. Bake at 400 degrees for 25 minutes or until tester inserted near center comes out clean. Serve warm, cut in wedges, and top with syrup. Makes 4 to 6 servings.
