Baja Seafood Stew
INGREDIENTS:
1 c Uncooked Orzo or ring
-macaroni
1 pk (6 ounces) diced dried
-mixed fruit (about 11/2
-Cups)
2 c Cut-up cooked chicken
1 c Cubed jicama
2 Green onions (with tops),
-sliced
1/2 c Mayonnaise or salad
-dressing
2 tb Yoplait Original plain
-yogurt or sour cream
1 ts Ground red chilies
1/4 ts Salt
1 c Uncooked Orzo or ring

Orzo is tiny pasta that resembles the shape of rice.
Cook Orzo as directed on package except stir fruit into boiling water with Orzo. Rinse Orzo and fruit with cold water; drain.
Mix chicken, Orzo, fruit, jicama and onions. Mix remaining ingredients; toss with chicken mixture. Cover and refrigerate about 2 hours or until chilled.
6 servings.
