INGREDIENTS:
4 t Olive oil 1/4 c Chopped parsley
1 Clove garlic 1 t Lemon juice
1/2 c Chopped onion 1 t Dried basil
1 c Sliced zucchini 1/2 t Dried oregano
3/4 c Sliced mushrooms -Black pepper
1 c Broccoli flowerettes 2 c Cooked drained spaghetti
1/4 c Chicken broth or water 2 oz Shredded Mozzarella cheese
3/4 c Halved cherry tomatoes 6 T Grated Parmesan cheese

In large skillet, heat olive oil, add garlic, onion, zucchini and mushrooms, saute until onion is translucent. Add broccoli and broth. Cover and steam 5-7 minutes or until broccoli is tender crisp. Add tomatoes, parsley, lemon juice and seasonings. Toss thoroughly. Serve over spaghetti. Sprinkle with Parmesan and Mozzarella cheese. Makes 4 servings. 1 serving = 301 calories. Submitted
