280009 Mexican Chicken Casserole
INGREDIENTS:
2 T Vegetable oil 1 c Chunky salsa (Hot)
3/4 lb Chicken breasts, cut into 2 c Shredded Cheddar
-1/2" pieces 1 cn Corn & red pepper
1/2 c Chopped onion -Sour cream
1/2 c Chopped green pepper -Tortilla chips
1/2 c Chopped red pepper
2 T Vegetable oil 1 c Chunky salsa (Hot)
3/4 lb Chicken breasts, cut into 2 c Shredded Cheddar
-1/2" pieces 1 cn Corn & red pepper
1/2 c Chopped onion -Sour cream
1/2 c Chopped green pepper -Tortilla chips
1/2 c Chopped red pepper
Heat oil and cook chicken 2 minutes. Add onion and peppers. Cook until tender. Drain if necessary. Add chunky salsa and drained corn and 1/2 of cheese. Simmer over low heat until cheese is melted. Just before serving sprinkle rest of cheese over top and add dollop of sour cream. Submitted
